Summertime and the living is easy! When the temperature rises, we start grilling and living on salads in this household. Lots and lots of salads. Here are 15 of my favorite from the blog’s archives. Some are entrée salads. Many of them can easily be turned into a meal by adding a favorite grilled protein. They all lend themselves to substitutions of a preferred green or a more seasonal ingredient as the garden starts producing. There are several grain-based salads as I find they hold up well in the summer heat and can be assembled in advance. Again, feel free to substitute a different grain of choice. 1- Roasted Honey Balsamic FIg Salad with Goat Cheese and Pistachios
Don’t like figs? Grill peaches for an equally dazzling salad.
2- Warm Roasted Tomato Israeli Couscous Salad
3- Roasted Butternut Squash Couscous Salad with Apricots and Mint
4- Strawberry Chèvre Arugula Salad with Orange Poppy Seed Dressing
5- Golden Beet and Blueberry Chèvre Salad with Caramelized Maple Hazelnuts
6- Roasted Sweet Potato Rice Salad with Cherries and Toasted Hazelnuts
7- Beet Blood Orange Salad with Blue Cheese, Mint and Pistachios
8- Roasted Beet Salad with Cumin Vinaigrette
9- Mediterranean Chicken Couscous Salad
Substituting sliced peaches or nectarines for the citrus would also be good in this salad.
11- Shredded Carrot Salad with spicy mustard and lemon
When zucchini is in season, you can toss zucchini ribbons or noodles in the same dressing. Really great also!
12- Niçoise Salad
With planked grilled salmon fillet
13- Pea and Edemame Salad with Shaved Pecorino
14- Grapefruit, Salmon and Avocado Salad with Watercress
15- Grain Salad with Citrus, Dates, Cabbage and Cranberries

Definitely salad season. We have gorgeous lettuces of every kind from a neighbor who flags me down when I ride past on my bike and gives me big bags full. I have to tell you another meatball story. I was at my garden club year end social last week when a board member said her pilates teacher(whom I know) was raving about “my” (YOUR) Mexican meatballs. Said they were the best meatballs ever and she made them all the time! If you ever publish a cookbook, you must include them!

Thank you Teresa! I have been touring private English gardens in the Cotswolds and Berkshire region in cold and rainy weather and discovering wonderful salads here in spite of the weather. The farm to table movement is popular here and the cooking quite creative and a departure from traditional fare. Will try to recreate several of those salads when I return.

I’m really intrigued by the fig salad. I like them- but seldom eat them. This post gives me a new idea for how to use them.
I love figs also Sheryl and their season is so short. I came up with that salad idea and it was very good way to enjoy figs in a savory way. I hope you enjoy the salad!
