Shredded Carrot Salad with Lemon and Spicy Mustard

I have been experimenting with making spiralized salads with more or less success.  Zucchini ribbons are easy to make, carrot ribbons, not so much.  I bought one of those simple devices readily available and they don’t work so well with harder vegetables, hence this salad is called a “shredded carrot” salad. It had ambitions of becoming a spiralized salad, inspired from the popular Skinny Taste blog. I wanted to share my version of the salad as it punches a lot of flavor and will hold up well as make-ahead addition to your warm weather cook outs. I have never been a huge fan of shredded carrot salads as they often are too sweet.  Adding lemon juice and spicy mustard to carrots gives them attitute and transforms them in a most unexpected way. An added bonus is how simple this is to throw together.  Watch this salad vanish!


Shredded Carrot Salad with Lemon and Spicy Mustard

  • 1 lb of carrots, peeled and shredded (you can buy ready to go shredded carrots)
  • 2 t spicy brown mustard
  • juice of a lemon
  • 1 T olive oil(I used a Meyer lemon flavored one)
  • 1/4 t sea salt
  • freshly ground black pepper to taste
  • 4 T chopped chives
  1. Place the shredded carrots in a medium bowl.
  2. In a small jar, shake the mustard, lemon juice, olive oil and salt and pepper to make a vinaigrette.  Toss with the shredded carrots.
  3. Mix in the chopped chives.

  1. i know exactly what you mean Johanne. The carrots don’t work so well, but the Skinny Taste lady’s carrots are made from some of those fancier spiralizers. I acquired mine from a friend, it must be like yours as it does not do carrots, I did not want to buy yet another gadget that I would rarely use, except on special occasions., so stuck with a very basic one. Your carrot salad sounds lovely with the lemon and mustard. Happy Mother’s Day, let’s hope we get a burst of sunshine by the weekend.

    • We must have the same gadget Loretta! The ones that can handle hard veggies are major pieces of equipment and I’m trying to streamline my life not add to it! Are you ready to build an ark yet? I could never live in England or Seattle!

      • Ha ha Johanne, it’s no wonder I left England, it was constant rain and drizzle. But I must say their summers have improved; in fact this week they enjoyed some amazing weather with temps in the mid-70’s. I’m bummed that I haven’t been able to work in my garden this week.

  2. Johanne, the weather has been bizarre here in Vegas with sun, rain and even a hailstorm. But I was able to get away to wonderful museums in Europe to see such touching paintings of the carrot. It’s definitely not a lowly vegetable and each time I see them in future paintings I will think of this posting which took quite a bit of effort to produce. Thank you for my trip and tour. I especially like the Dutch ones with their familiar interiors and light from the leaded Windows on the left. And I do intend to try your recipe. 😋

    • Oh I knew you would love the art Dona! Who knew carrots could be so beautifully rendered? I loved this site I discovered while searching for carrots in art. The recipe was so simple I really felt I needed to add something to this post and was so happy to find this site. Happy you will try the recipe. So simple but really really good! I am thinking we are going to need to build an ark if this weather keeps up! Crazy Las Vegas is also experiencing weird weather.   3. I love this salad! There is a great punch of flavor, and the simplicity makes it great for anytime. I haven’t gotten a spiralizer but boy is it tempting looking at some of these recipes. I think your shredded carrot salad is the way I would go too.

    • With my limited experiene with spiralizers, the cheaper ones work fine for zucchini noodles but you need a heavy duty one ($$$) for hard veggies. I ended up loving this salad and was so surprised at how tasty it was with so few ingredients! Almost embarrased to blog about it except that it was great!

    • I loved discovering this painting as well Teresa. The Dutch Golden Age in painting always amazes me. I did not know Gerrit Dou’s work but hope to find the painting on a future trip to Paris. Glad you like this simple salad. I made it again just for myself this week and love love love it! I think the Meyer Lemon olive oil adds another hit of lemon, if you can get it.
